Hummus with roasted cauliflower

Ingredients

250 g dip hummus

1 head of cauliflower

1/4 tsp cumin

1/4 tsp paprika

2 tablespoons Olive oil

Salt and Pepper

To finish: parsley and Coriander

Tahina dressing

Preparation

1 Preheat the oven to 220 °C top/bottom heat. Bring the water to the boil in a pan.

2. blanch the whole cauliflower in salted water for approx. 3-4 minutes .

3 Rub the blanched cauliflower with the mixture of Olive oil, cumin and paprika.

4 Roast the cauliflower in the oven for 20 minutes , then drizzle with Olive oil .

5 Finally, spread the hummus around the edge of the plate with a tablespoon. Divide the roasted cauliflower into florets, arrange in the middle and top with the Tahina dressing, parsley and Coriander .
